Royal Toasties

Updated: Oct 4, 2023

Croûte au fromage, Royal Toasties, Käseschnitten.

Oh my gouda! Our twist on the classic Swiss dish "Croûte au fromage" will make your taste buds yodel with joy! Think of it as a fancy cheese on toast, soaked in white wine and topped with a mouthwatering combo of cheese, onions, and gherkins. Then we bake it all to gooey perfection. You'll be saying "gruy-yeah" to this dish fast you can say Käseschnitten.

It's like cheese on toast on steroids that will have you feeling like you're dining in the Swiss Alps.

Time: 25 mins | Serves: 2 to 4

INGREDIENTS

4 thick bread slices

300g cheese (we used raclette cheese slices)

1 handful of chopped onion

1 handful of chopped spinach

2 garlic cloves (crushed)

1 tomato (sliced thickly)

2 tablespoons capers

2 tablespoons chopped up gherkin

50ml white wine

1 tablespoon paprika powder

1 tablespoon mustard (mild or hot – your choice)

2 tablespoons butter

Pinch of salt & pepper

2 to 4 eggs (as desired)

2 to 4 slices of ham (Stephane’s version)

Some sliced bread to make your toasted soldiers

HOW TO MAKE IT

1. Preheat the oven to a blazing 220°C (428°F.) - we want that cheese melted to perfection!

2. Grease your oven tray with butter, but if you're feeling fancy, use a brush, paper towel, or a napkin - just don't use your fingers like I do (hehehe).

3. Take your 4 slices of bread, put them on the tray, and baptize them in a pool of white wine - we're getting the bread drunk for extra flavor!

4. Now it's time to butter them up and slather on the mustard like it's going out of fashion.

5. Crush up some garlic and sprinkle it over the slices - we want that vampire-proof coating.

6. Add the spinach for some much-needed greens, and for the meat-eaters, slap on the ham like it's a one-man Vegas buffet.

7. It's time to get fancy with some sliced tomatoes, onion, and gherkins - we're building a toastie tower!

8. Shake on some paprika, salt, and pepper to give it that extra kick - we want this toastie to have a spicy attitude!

9. Now, lay the sliced cheese on top of everything like a cozy blanket and sprinkle more paprika because why not?

10. Pop it in the oven and let it bake to cheesy perfection for about 12-15 minutes - set that timer and prepare to salivate!

11. While you're waiting, fry up some eggs because eggs make everything better, even royal toasties.

~ When your toasties are ready, top some of them with a fried egg and get ready to be crowned the king or queen of toasties.

Bon appétit bébé!
