Time: 20 minutes | Servings: 4 INGREDIENTS 2 tablespoons olive oil
1 onion (finely chopped)
4 cloves of garlic (crushed) 400g of mussels without shells (fresh or frozen)
300g of Tagliatelle pasta (fresh or dried)
1 bunch (20g) parsley (finely chopped)
100ml white wine
250ml heavy cream
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chili flacks (optional)
2 handfuls of grated Parmesan cheese
HOW TO MAKE IT
1. Prepare the pasta as per the package instructions until it achieves an al dente texture. Drain it and keep it aside for later use.
2. Heat up your favourite skillet (fry pan) with a drizzle of olive oil on medium heat. Toss in the onion and garlic, letting them sizzle and soften for a couple of minutes until they become translucent.
3. Time to introduce the mussels (shells removed) and white wine into the pan, letting them mingle for about 3-4 minutes. Remove the pan from heat and set it aside for a moment.
4. In another saucepan, gently heat the cream on a medium flame. Toss in your Parmesan cheese, a pinch of salt, some pepper, and chili flakes (if you're feeling a little spicy), and stir until the cheese has melted into a velvety sauce. Remember to reserve a bit of Parmesan for the final garnish.
5. Pour this creamy delight into the skillet with the cooked mussels, onions, and garlic, giving it a good stir to make sure everything gets acquainted.
6. Finally, introduce your cooked pasta and parsley into the mix, stirring it all together until every strand of pasta is lovingly coated in the sauce. Don't forget to keep a bit of parsley aside for garnishing.
