Pumpkin Soup with Toasted Soldiers

Well, hello there pumpkin lovers! Who needs a warm hug on a chilly day when you can have a bowl of delicious butternut pumpkin soup? It's the perfect way to warm your heart and your belly from autumn to spring. And let's not forget about the toasted soldiers - they're like crunchy little sidekicks to your soup superhero. So come on, get cozy and let's slurp some soup!


Time: 25 mins | Serves: 6

INGREDIENTS

2 tablespoons butter

Approx. 1.5kg pumpkin (skinned & roughly chopped) - our favorite is butternut pumpkins

1 onion (roughly chopped)

2 cloves of garlic (crushed)

1L vegetable stock (or chicken stock if you prefer) – use only 750ml of stock if you prefer thicker soups

double cream

2 tablespoons cornstarch (as a soup thickener if needed)

HOW TO MAKE IT

1. Alright pumpkin, let's get started. Heat up the butter and sauté that onion until it's soft like a cuddly teddy bear.

2. Now let's add some garlic, because let's face it, who doesn't love the smell of garlic? Give it a minute to work its magic, then throw in the pumpkin and sauté it all together like a big happy family.

3. Dissolve the stock cube in 750ml of hot water to make the broth and pour it in and let everything simmer together for about 10 minutes, until the pumpkin is softer than a kitten's fur and ready to be blended into a soup fit for a queen.

4. Take your trusty hand blender and purée that pumpkin mixture into a smooth, velvety soup. And if you want it thicker than a Kardashian's contour, mix in some cornstarch.

5. Now for the finishing touch, sprinkle in a pinch of salt and pepper, just like seasoning your life with a little bit of spice.


~ Serve with some toasted soldiers, which are basically fancy toast strips, and a splash of cream to make it even more indulgent.


PS: And just in case you're not from Australia or haven't heard of these, "toasted soldiers" are basically just thin strips of toast that we used to call them as kids down under. But trust me, they're the perfect dipping tool for this delicious pumpkin soup!
