Time: 45 minutes | Servings: 4 INGREDIENTS 2 tablespoons olive oil

4 cloves of garlic (crushed) 1 onion (finely chopped) 400g chicken thigh fillets (diced)

8 brown mushrooms (sliced)

Half white cabbage (diced) 400g Arborio risotto rice 150ml white Wine 1 chicken stock cube (mixed with 1.5L of boiled water to make the stock) 120ml thick cream 1 bunch flat-leaf parsley (finely chopped)

1 teaspoon chili flakes 1 teaspoon salt

1 teaspoon pepper 1 cup grated Parmesan cheese HOW TO MAKE IT

It’s a 2 part cooking process!

Part 1. 1st cook the chicken, mushrooms, and cabbage separately.

Part 2. Then cook the risotto, adding the chicken, mushroom, cabbage, and all the little friends halfway through.


Part 1: 1. Heat half the oil in a pan, chuck in the chicken, mushrooms, and cabbage, and saute for around 8-10 minutes until the chicken is cooked through, then lovingly set aside.


Part 2:

1. Get ready for some saucy action! In a large pan, heat up the rest of the oil and sauté that onion until it's soft and ready to mingle.

2. Stir in the garlic and cook for a minute. Give it a good stir, you know you want to.

3. Time to get that rice involved! Add it to the pan and stir continuously for a minute. Oh, the anticipation!

4. Add the white wine and let it sizzle for a minute. Give it a swirl, it's like a dance party in a pan!

5. Dissolve the stock cube in 1.5L of hot water to make the broth and pour in half of that boiling stock and let it simmer for about 10 minutes, stirring occasionally to make sure nothing sticks.

6. Don't forget to add the cooked chicken, mushrooms, cabbage, salt, pepper, chili flakes, and parsley to really spice things up!

7. Keep simmering and adding stock until that rice is perfectly creamy and ready for the next step.

8. Take it off the heat and add the cream and half of that gorgeous grated Parmesan.

9. Give it a good stir and feel the excitement build.
